Baked Salsa Chicken

Last night I headed to the gym right after work at 6 for a quick 45 minute work out, it was great. But the last few times I have done this when I get home I’m so hungry I overeat because then it takes me another 30-45 minutes to make dinner.

So tonight I prepped dinner ahead of time and called D when I was 5 minutes away from being done working out to start the oven and put the chicken in. It turned out to be the best chicken I have ever made.

Baked Salsa Chicken

3 chicken breast, defrosted
2 cups chunky salsa
1 cup of low fat shredded cheese
taco seasoning, or Mexican seasoning of your choice I had enchilada seasoning

Heat oven to 375

  1. Place chicken in pan that has been sprayed with non stick spray and cover with seasoning on both sides, then top with salsa
  2. Bake for 25-30 minutes or until done
  3. Top with cheese for last 5 minutes
  4. Let settle for a couple minutes after removing from oven and enjoy!

The nutritional count is: 133 calories per breast, 2.1 grams of fat and 18.8 grams of protein. Now this is for 3oz chicken breast counts are not totally accurate and will vary depending on brands and products.

I served this with salad and fat free refried beans
