So I know it really hasn’t been that long but it feels like forever since I updated my number. Well I got on the scale yesterday to see 165.8, I am really excited about this number because it means I am far far away from the 170’s hopefully for good. Today I got back on the scale and it said the same thing so I think it’s here to stay.
So I have lost a total of 52.2 lbs since December 23rd, 2008. I am very proud of myself that is the most weight that I have ever lost in my life and I keep thinking to myself if I keep going and get down to 118 I will have lost 100lbs. I have not weighted 118 since probably elementary school so this is kind of a stretch for me and I am keeping my current goal of 140 for this year. But we will see how it goes.

So last night for dinner we had faux pizza and D said it should go on the top of my recipes. So here it goes.
Ingredients:
4 cups spaghetti squash
1 egg
1/4 cup grated Parmesan Cheese
1/2 cup tomato sauce
1 cup mushrooms
1 red pepper
8 oz ground turkey
1/2 cup shredded mozzarella cheese
Directions:
1. Cook 1 spaghetti squash (I poke several times with a knife and microwave whole for 10 minutes). Cut open, clean seeds from center and discard.
2. Scrape flesh into a bowl and let cool for a bit. Add 1 egg, 1/4 cup grated Parmesan Cheese, and salt and pepper to taste and mix well.
3. Spray a pie plate or shallow casserole with non stick spray and spread spaghetti squash mixture to form a thick “crust”. Bake at 400 until the crust begins to brown, approx 30-45 minutes minutes.
4. Top with 1/2 cup marinara sauce or tomato sauce, and any pizza-type toppings you desire (veggies, turkey pepperoni, sausage, olives). Finish off with 1/2 cup shredded mozzarella cheese, and 1/8 cup grated Parmesan. Bake an additional 20 mins. until the cheese is melty and bubbly and beginning to brown.
5. Cut into wedges and serve. Serves 4 generously.

So Fat Tuesday also known here in Michigan as Paczki Day. Where people all over the great state of Michigan gorge themselves on these wonderful donuts that contain about 25 grams of fat and 400+ calories each.
Today I was thinking all about the greatness of eating one of these and because I didn’t want to buy a whole dozen I instead went to Starbucks and got an apple fritter. AH! Why do I do this to myself? Anyone.
Here I am doing good and trying to recover from overeating this weekend and I go and eat a freakin donut. I hate my brain sometimes.
So Lent starts tomorrow and everyone is supposed to give up something important to them for lent. I am giving up. . . Fast food and Starbucks. It will be hard, I’m going to Florida on Thursday morning so I will have to find a way to deal at the airport. But I am committed no fast food or Starbucks for 40 days and 40 nights.
So my question is what are you giving up?

I just thought I would jot a quick little note to say when I got on my Wii Fit Plus yesterday to workout and do my body test it said I was no longer obese.

Brown Rice and Lentil Casserole
Ingredients
3 cups broth (chicken or vegetable)
1 cups green lentils
3/4 cup brown rice
1 can diced tomatoes, Italian style
1 can mushrooms
1/2 cup frozen chopped spinach, still frozen but broken up
2 tsp Italian seasoning
1 tsp garlic powder
1/2 tsp pepper
2 cups shredded sharp cheddar cheese
Directions
1. Preheat oven to 350.
2. Add broth, lentils, brown rice, tomatoes, mushrooms, spinach and spices to 9×13-inch glass baking dish. Stir together and cover tightly with foil.
3. Bake at 350 for 2 hours.
4. Remove foil and sprinkle shredded cheese over the top and return to oven and bake uncovered for 20 more minutes, or until cheese is completely melted.
5. Let stand for 5 minutes before serving with your favorite vegetables

I really can’t believe it but I have lost, 5.8lbs in January.
That is a huge number for me. I don’t think I have lost that much in one month ever maybe. I have just been really focused on what I eat and writing everything down in my new little notebook has really made the difference. I think that if I don’t want to write something down I shouldn’t be eating it.
I have joined the 3fatchicks.com forum for the South Beach diet and they are doing a lot of great things with accountability. One is a daily challenge for 64 days, the challenge I chose was to exercise or meal plan. Which I have been doing great at 3 days in a row so far. The other is monthly weight goal, so my weight loss goal for February is 5lbs. I think I can do it again. Especially with the impending trip to Mexico just on the horizon.
My montra while I have been working out has been 150 by May. I have also been thinking about the Road Ends 5 Mile latley and I want to do not just good but great this year. The first year I ran it I got 1:13:19 as my time. Last year at 190lbs and 4 month post partum I got, 1:31:44. It was a really bad time. This year my goal is 1 hour.
So here is a cheer for February at the end of this month I’ll weight 163 and hopefully be able to run 1 mile without stopping.

Last night I headed to the gym right after work at 6 for a quick 45 minute work out, it was great. But the last few times I have done this when I get home I’m so hungry I overeat because then it takes me another 30-45 minutes to make dinner.
So tonight I prepped dinner ahead of time and called D when I was 5 minutes away from being done working out to start the oven and put the chicken in. It turned out to be the best chicken I have ever made.
Baked Salsa Chicken
3 chicken breast, defrosted
2 cups chunky salsa
1 cup of low fat shredded cheese
taco seasoning, or Mexican seasoning of your choice I had enchilada seasoning
Heat oven to 375
- Place chicken in pan that has been sprayed with non stick spray and cover with seasoning on both sides, then top with salsa
- Bake for 25-30 minutes or until done
- Top with cheese for last 5 minutes
- Let settle for a couple minutes after removing from oven and enjoy!
The nutritional count is: 133 calories per breast, 2.1 grams of fat and 18.8 grams of protein. Now this is for 3oz chicken breast counts are not totally accurate and will vary depending on brands and products.
I served this with salad and fat free refried beans

I wish I was talking about the classes because my body would like that a lot more than what is going on right now.
My eating has spun totally out of control, I only gained 1 pound during the whole Xmas/New Years break and now I am up 4 pounds in two days. I just need to stick with it and not go crazy eating crap!!!
Oh man, any good advice on getting back on track?

I have been neglecting my job duties as a blogger. And unlike last year at this time I don’t really have a good excuse. Just busy like everyone else this time of year.
I have continued to do well on South Beach Diet although I am starting to stray a little as the temptations of the season become more and more of a reality. My current weight is 170.6! Which is great for me although I was really hoping to be 167 before Christmas Eve. The important part is I came really close to my goal and who knows maybe ( I doubt it) it will still happen I mean we do have two days.
Xander will be one on Christmas eve and we are really excited, I would like for Dave to get the swingset up and ready to use in the backyard for his birthday I would like for him to be able to play on it. We also went out and bought him three presents to open; one on his birthday and two Christmas morning.
On Christmas morning we will be going to my grandpa’s house in PA, it will be Xander’s first flight and I am nervous about packing and just the trip not about actual flying. I am also nervous because I have made so much progress in the weight department I don’t want to be totally sabotaged by a trip out of town. My parents are going to so I’m sure if I bring my workout clothes my mom will want to workout with me. I have been trying to formulate a plan for while I am away, knowing that I won’t have access to a large variety of South Beach foods. I think that my best plan would be to be calorie conscious sticking to around 1800 or less a day and not expect to loss but hope to not gain. Which means I should bring along my laptop and log in to track my food every day. I will also try to plan out what I’m going to eat ahead of time as much as possible so I am not surprised and I have a estimate of how many calories things are.
So my health Christmas goals are as follows:
- Have a good time
- Work out at least 30 minutes per day
- Don’t over indulge- 1800 calories per day
- Drink lots of water- Drink little wine

I have been doing really well on the South Beach Diet, I’m still on phase 1 until Saturday when I am going to have cheat chinese food and then on to phase 2. I am officially down 45.2 lbs total since my pregnacny high of 218 which puts me at 172.8!
I know 172.8 wow that is a crazy number for me. My before Christmas goal is 167.2 only 5.6lbs away.
So I keep going back and forth can I make it or can I not make it. Who knows, I’m going to keep giving it my best and stick to the diet. I don’t need to indulge in sweets and white flour and bread before the holidays. I feel proud of myself for having such self control, when this is the time of year most people are packing on the pounds.
On a side note I had a good weekend, on Friday I didn’t do anything ordered salad to go from our local coney and we went to bed early. D is not feeling good again. It seems as if we have the never ending cold happening around here.
Saturday I went shopping with my mom, I got new running shoes and I bought her a new running outfit and she bought me a new running outfit. I also got some my grandma done and my sister in law and started on my other sister in law and cousin. I spent way to much money. It will be ok I’m going to pay off my credit card with my holiday money I get this year.
Sunday I left and went to my parents house so they could hang out with Xander and I could work from their house and D could get some homework done. He has a big final paper that is soon to be due.
The only problem with SBD is that I have to shop a lot because you just eat a lot of fresh food. So I am back to the store hopefully tonight to pick up some celery and veggies.
